With backgrounds in nursing (Liz) and IT (Joe), we share a genuine passion for creating welcoming, memorable experiences. In 2017, we breathed new life into a closed B&B—formerly known as Das Helwig Haus—and began a heartfelt journey to create Sabo's on Severn.
Over the past few years, it has been a true labor of love. We've restored and re imagined the property into a warm, pet-friendly countryside retreat with eight unique rooms, seasonal gardens, and a genuine focus on hospitality.
At the heart of Sabo’s is our love for cooking and entertaining. Our on-site cooking school, Cooked From Scratch, offers immersive culinary experiences inspired by global cuisines, preserving traditions, fermentation, and seasonal produce. We also host regular dinners and supper clubs, where guests can enjoy shared platters, tapas nights, and long-table meals featuring local wines and fresh Granite Belt produce.

Nestled on 33 peaceful acres backing onto the Severn River, Sabo’s on Severn is a boutique guest house and countryside retreat in the heart of Queensland’s stunning Granite Belt. Surrounded by nature and steeped in comfort, it’s the perfect place to unwind, reconnect, and savour the slower pace of rural life.
We offer eight thoughtfully styled guest rooms, including:
Four in-house rooms with warm interiors and easy access to shared spaces,
And four self-contained units, each with cosy wood-burning fireplaces—perfect for those crisp Stanthorpe evenings.
You’ll be sharing the landscape with abundant birdlife, friendly kangaroos, a resident platypus, alpacas, sheep, and chickens. It’s a place where nature and hospitality go hand-in-hand.
A seasonal dinner menu is available on request—ideal for travellers arriving after work or those who simply prefer to settle in and relax. Please enquire about availability when booking.

Surrounded by over 50 award-winning wineries, boutique brewers, and artisan producers, this region is bursting with flavor. Local growers offer everything from stone fruit, apples, pears, tomatoes, eggplant, capsicum and zucchini to olives, cheeses, jams, preserves and gourmet condiments—all right on our doorstep.
